Mushroom Fry

This is a nice story I came across which I wanted to share with you all.  

In a village in China, lived Huang Fu, who was a very rich man.  He was deliberately tough on his household helper, Hop. Huang Fu gave Hop a bottle and said, 'Buy me a bottle of wine.'  Hop, the poor helper enquired, 'How can I buy you wine with no money at all?'  Huang Fu replied disdainfully, 'Anyone can buy wine with money. It takes real skill to buy wine without money.'  Time elapsed and Hop eventually returned with the empty bottle. He handed the bottle to Huang Fu and murmured, 'Enjoy the wine, please.'  Staring at the empty bottle with some dismay, Huang asked, 'There is no wine, how can I enjoy this?'  Hop replied to Huang Fu, with a straight face, 'Anyone can enjoy wine if there is some. It takes real skill to enjoy wine when there is none.'

Preparation Time: 20 minutes
Serves 4

Ingredients:

200 grams button mushrooms, sliced
2 tablespoon sunflower oil
2 medium sized red onions, chopped
2 medium sized tomatoes, chopped
1 teaspoon ginger-garlic paste
½ cup yoghurt
2 teaspoon coriander powder
½ teaspoon chilli powder
½ teaspoon turmeric powder
Salt to taste
1 teaspoon sugar
1 tablespoon coriander leaves, chopped

Method:

  1. Heat oil in a pan and when hot, add onions, ginger and garlic paste and fry for a 5 minutes on medium flame.  
  2. Add the tomatoes, coriander powder, chilli and turmeric powders and yoghurt and cook for two minutes.  
  3. Add the mushroom and ¼ cup water and salt and cover with a lid and cook till dry, approximately 10 minutes on low flame.  
  4. Finally garnish with fresh coriander leaves.
